Olive Oil for baking?

I had a failed attempt at making blueberry muffins last night. The recipe I used called for oil instead of butter or shortening, but I was out of vegetable oil, so I used olive oil. Bad idea. The muffins are in the trash as I type this. The oil seems to have gone to the bottom of the batter, so the bottom of the muffins were all greasy and mushy. Ew! I’ve read several websites that say that olive oil can be used for baking, but I definitely do not recommend it. It also gives that olive oil taste, which normall isn’t bad, but in a sweet bread, it is most unwelcome.
