I made some cinnamon rolls from scratch for the first time tonight. Wow, what a process it was, but it was well worth it. I used a RECIPE from the “Pioneer Woman Cooks!” website. I just happened across it today and enjoyed reading the recipes and I liked that she uses such common ingredients. I ran into a few complications throughout the process. First off, I think I rolled the dough too thin, so I had a hard time rolling the dough to make the cinnamon rolls because it wouldn’t stay round as I rolled it… it would just become… well, kinda flat. Also, while I was rolling, it seemed like ALL the stuff (cinnamon, melted butter, and sugar) I had spread on the dough was squishing out, so I was afraid there would be no more filling left inside. The squishing out of the filling was very messy… I think i used up a half a roll of paper towels to keep from dripping on the floor. I think instead of melted butter in the filling, I’ll use softened butter so that it’s spreadable, and less squishy as I roll the dough. Aside from those problems, it was pretty fun to make them. Nathan and Sean really liked them, so that’s a plus. Oh, another thing, if you’re not wanting to make a ton of rolls, cut the recipe in half. I made about 2 dozen rolls from only half the dough. Then I ran out of cinnamon, so I need to get more cinnamon so I can use the rest of the dough. Thankfully, the dough can go into the refrigerator for a day or two. Oh, and by the way… there was still more than enough filling left in the rolls, even after so much squished out. They were delicious!

Workout Tracking, Cook Your Lettuce
I’ve been on a long quest to lose weight the past few years. I’m glad to say that I’m back to the weight I was when Nathan and I fist started dating. I recently found a website called Traineo.com. You can log in your workouts, your diet, and weight and the site graphs it so you can see your progress. It also calculates your calories burned during your workout, and it tells you how far to your goal and how long you have to get there. You can also add “motivators”… these are people who can see your progress and leave you messages and comments to keep you motivated and hold you accountable. I don’t have any motivators yet… anyone want to volunteer? 🙂
I tried a new thing tonight… stir-fried iceberg lettuce. I made a stir-fry with summer squash, broccoli, onions, garlic, mushrooms, and iceberg lettuce. I added some Asian Vinagrette, salt and pepper to it while it was cooking. The lettuce acts just like other greens… doesn’t really add any flavor, just soaks up the flavor of the sauce. It turned out pretty good. Apparently, cooking lettuce is a popular thing to do in some Chinese dishes.

Not many (non-filipino) people I know like Spam. Perhaps I need to move to Hawaii? Nathan pointed me to this article. I grew up eating Spam with scrambled eggs and white rice for breakfast. Also, Spam with fried rice is yummy too. Mmmmm, I wonder if they sell Spam at Costco… that would be a TON of Spam… might last me a whole week! 🙂 I haven’t had Spam since before I got married. *sigh*

Freecycle, Craigslist
I scored some free/inexpensive items today on Freecycle.org and Craiglist. I got a pictionary game off of Freecycle. I played this recently and had a blast. I also scored a bike trailer for Sean to ride in and a jogging stroller for pretty cheap on Craigslist. I can hardly wait to use them. I LOVE IT!!! It’s like thrift store shopping online, except sometimes it’s free!
Nathan loves strategy games and games where there is not much “luck” involved. Me? I love word games and brain teaser type games. I finally got Nathan to play Boggle with me last night. I remembered it was really fun, but boy, I could play that game for hours upon hours! We finally had to stop to get Sean ready for bed. I also recently found a site called “Playwithyourmind” that has all kinds of different games that make you think. There’s all kinds of word, math, memory, logic, focus and other types of games there. It’s not full of fancy schmancy graphics, but the site kept me occupied for much longer than I should have been playing.
Yahoo Time Capsule
